In former times, pepper was worth its weight in gold and considered the 'king among spices'. Black pepper is a warm and highly aromatic spice producing a bitingly hot flavour. Ground pepper should not be stored too long as its aroma deteriorates quickly. Ideally, ground pepper is added just before serving.
Black pepper is ideal for beef, particularly steaks. As a rule, black pepper is only added to dark-coloured dishes.
